Hello, it’s been a while. One of the positive things with the current pandemic is having the time to cook again. Like many people, I invested in an Instant Pot with the intent of cooking more. That didn’t happen. Fast forward to present day with much time staying safe at home, I decided to finally learn how to use my Instant Pot. Below is the recipe of my first gumbo ever. I made modifications to recipes I’ve seen and added ingredients to my liking.
Time
- Prep Time: 40 mins
- Cook Time: 30 mins
- Servings: 6-8
Ingredients
- 1 pound skinless, boneless chicken thighs
- 3 tomatoes, chopped
- 1 onion, chopped
- 6 cloves garlic, minced
- ¼ cup vegetable oil
- ½ cup all purpose flour
- 2 tablespoons garlic powder
- 2 tablespoons Italian seasoning
- 2 tablespoons paprika
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 tablespoon cayenne pepper
- 1 tablespoon onion powder
- 8 ounces canned tomato sauce
- 4 cups chicken or vegetable broth
- 1 pound shrimp, peeled
- 1 pound fresh okra, sliced
- 1 cooked smoked or hot sausage link, sliced
- 4 cups of cooked rice
Instructions
Prep chicken, onion, garlic, tomatoes
- Cut chicken thigh into 3 inch pieces, set aside
- Chop and mince onion, garlic, tomatoes, set aside in a separate bowl
Saute chicken and ingredients
- Press “Saute” on Instant Pot
- Add 1 tbsp of vegetable oil. When oil is hot, add chicken, cook until brown, then remove with a spoon
- Add rest of vegetable oil, flour, all the spices and seasoning (garlic powder, Italian seasoning, paprika, salt, black pepper, cayenne pepper, onion powder), stir constantly and cook for 5 minutes
- Add onion, garlic tomatoes, cook until softened, press “Cancel” on Instant Pot
- Add chicken, tomato sauce and broth to pot
- Select “Manual” and cook gumbo at high pressure for 20 minutes
Cook rice and prep okra, sausage, shrimp (while gumbo is cooking)
- Cook 4 cups of rice in rice cooker or stove top
- Slice fresh okra and sausage into ½ inch pieces, peel and clean shrimp
Add remaining ingredients
- When timed cooking is finished, use quick release to depressurize the pot and press “Cancel”
- Open pot lid, press “Saute”
- Optional: Add water to reduce the thickness of the gumbo
- Add okra and sausage, add shrimp when okra begins to tender
- Allow gumbo to boil and shrimp to cook
- Taste test, adjust spices if needed before pressing “Cancel”
