Recipe: No-bake peanut butter cheesecake bars with granola crust

I’m back with another granola recipe! I was inspired by the magical peanut butter bar recipe that Vicki from My Favorite Indulgence shared with me. I love peanut butter and her recipe sounds delicious. But I decided to do something different and went with cheesecake bars.

This was my first time making a no-bake cheesecake. It takes a little time to make but the trade off is a dense cheesecake texture unlike the baked ones.


Ingredients

Granola crust

  • 1-1/2 cup My Favorite Indulgence chocolate mocha granola
  • 3 tablespoon melted butter

Peanut butter cheesecake

  • 8 ounce room temperature cream cheese
  • 1/2 cup creamy peanut butter
  • 1/3 cup powder sugar
  • 1 teaspoon vanilla extract

Chocolate drizzle

  • 1/2 cup chocolate chips
  • 1/8 cup of heavy cream

Instructions

Granola crust

  1. Break granola into smaller pieces. (Depending on the texture you want, use a rolling pin for coarse texture or a food processor for finer texture.)
  2. Line a 9×9 baking pan with parchment paper. Coat lightly with baking spray.
  3. Combine melted butter and granola. Press granola mixture onto the bottom of the pan.

Peanut butter cheesecake

  1. Remove cream cheese from refrigerator and allow to sit until soft.
  2. Whip the room temperature cream cheese until fluffy.
  3. Add peanut butter (the Trader Joe’s one is super creamy), powder sugar and vanilla extract to cream cheese. Gently mix everything together.
  4. When ready, dollop cream cheese mixture onto the baking pan. Then gently spread the mixture to cover the granola crust.
  5. Cover baking pan with plastic wrap. Refrigerate for at least 2 hours.

Chocolate drizzle (when your cheesecake is ready)

  1. Remove cheesecake from refrigerator and baking pan. Place cheesecake on a plate or rack.
  2. Cut cheesecake into 9 squares. (You can do this after the drizzling too.)
  3. Add chocolate chips and cream in a glass bowl.
  4. Heat in microwave for 30 seconds.
  5. Remove from microwave and stir. If the chocolate is not completely melted, heat again for 20 seconds at a time. Stir again.
  6. Dip spoon into melted chocolate and drizzle over cheesecake.
